Chocolate + cherry, using my favourites, Mayver's peanut butter and BodyScience Clean protein.

IT'S BEEN A MINUTE. But here's a recipe for some spicy Korean-style veggies, and tofu, and noods... Saucey, saucey noods ๐Ÿคค๐Ÿคค

Serves 2. Vegan. GF.

1 onion, diced
5 garlic cloves, finely chopped
1 large carrot, peeled + sliced
1 red capsicum, deseeded + chopped
2 large field mushrooms, chopped
4 kale stalks, leaves removed + finely chopped
200g tofu, sliced

100g packet sweet potato glass noodles (I got mine from Woolworths โ˜บ)

1/4 cup tamari
1 tblsp sesame oil
1 - 2 tblsp chilli paste (MasterFoods is my go-to!)
1 - 2 tblsp maple syrup (depends on how sweet you like it - omit if you don't want any sweetness!)

1. Cook the noodles according to packet directions. Rinse under cold water and set aside.

2. Gently pan fry the tofu until golden both sides. Set aside. In the same pan, stir fry all the veggies until soft.

3. Add the tofu back to the pan. Stir through the noodles.

4. Whisk the sauce ingredients together, adjusting for spice and sweetness as needed! Pour over the veggies + noodles, stir through well, and serve ๐Ÿ‘Œ

PASTA GOODNESS ๐Ÿ˜ save for the recipe because you'll want it! Trust me. It's a winner ๐Ÿ‘Œ


// EASY PASTA. Serves 3ish.
1 onion, sliced
5 garlic cloves, finely chopped
1 tsp italian herbs
1 zucchini, thinly sliced
2 large handfuls of cherry tomatoes, halved
400g tin lentils, drained + rinsed
250g (ish) GF penne (San Remo)
1 tsp tamari ()
2 - 3 tblsp herby pesto (Roza's Gourmet is my fave!)
Cracked pepper
Optional: Chilli flakes, vegan parmesan, or nutritional yeast

1. Fry up the onion, garlic + herbs until just softened. Add zucchini and cook until soft. Stir through the tomatoes and allow all flavours to meld together.

2. Meanwhile, cook pasta according to packet directions. Drain, rinse + set aside.

3. Throw in the lentils, and season with pepper. Add a splash of tamari, stir, then add the pesto + combine well. Stir the pasta through the veggies + pesto.

4. Serve! Add any optional extras lile parmesan, or chilli flakes, so on ๐Ÿ˜Š

SPICED HONEY-SOY TOFU VARIATION.
250g medium firm tofu, pressed
1/2 cup tamari
3 tblsp rice malt syrup
Zest of a small lime
1/2 tsp sesame oil
1/2 tsp chilli paste
1/2 tsp sesame seeds
2 garlic cloves, crushed + roughly chopped
Cracked pepper
- Slice the tofu into slabs (as pictured), and place in a large dish.
- Mix all marinade ingredients together and pour over the tofu. Leave to marinate for a few hours.
- Fry off the tofu in a large pan with a little of the sauce. Sauce should caramelise slightly, and tofu will brown + become almost sticky looking. Cook tofu on both sides.
- Remove the tofu from the pan, and pour the rest of the sauce into the pan. Allow it to simmer for about 5 minutes before removing it from the heat and pouring into a small pouring cup.
- Assemble with rice, greens, slices of tofu, and drizzles of remaining marinade ๐Ÿ˜‹

Basmati rice, cooked until... Cooked ๐Ÿ˜…
Green beans and broccoli florets - just eyeball the amount. Whatever you feel is good! Steam until just cooked, then fry until brown in a pan with a large teaspoon of minced ginger + a pinch of chilli flakes โœŒ

BBQ JACKFRUIT + MUSHROOMS.
4 garlic cloves, finely chopped
400g tin jackfruit (rinsed + drained)
250g sh*ttake mushrooms, halved + sliced
1/2 cup tomato paste
1 tblsp tamari
2 tsp rice malt syrup
1/2 - 1 tsp apple coder vinegar
1 tsp smoked paprika
1/2 tsp cayenne pepper
Salt + pepper

1. Shred the jackfruit. In a large frying pan, fry off the garlic, mushrooms + jackfruit until brown + wilted.
2. While that's cooking, whisk the remaining ingredients together, adding about 1/2 cup of water to thin it out.
3. Turn the heat right down on the frypan and pour the sauce in. Give it a quick stir before removing from the heat. The sauce will thicken quickly. Combine it all well, and serve! ๐Ÿ˜Š

With everything going on in the world (not just Australia!), we really need to be taking action. We may not be able to reverse the damage we've caused, but, at the very least, we can slow it down.
Let's stop debating whether we're in a climate crisis or not.
Let's stop pointing fingers, blaming people.
Let's just acknowledge that something is wrong, and do our utmost to change it.
Use less plastic. Take public transport more. Live minimally, only buying what you need from ethical, sustainable, and ideally, local estaishments. Conserve water. Switch your energy and superannuation providers. Buy in bulk, and buy produce from your local markets. Compost. Recycle. Grow plants, but eat more of them. Reduce your consumption of animal products. There are so many other nutritious, planet-friendly options out there, so why not try one of them instead?
If you're feeling overwhelmed by it all, just start small. Remember every little bit helps. You can start one thing, then go onto the next when you feel you can. Ease yourself into it. However you do it, whichever steps ypu take in whatever order you choose, you will be making a change this world desperately needs ๐Ÿ™

Your weekend brunch is SORTED thanks to this super easy tofu scram ๐Ÿ˜‰ While I love the more complex versions, the ones like Smith + Daughters that involve a sauce and all these other things, most of the time I truly just enjoy a basic scramble, much like this one. It's so so easy, and so so nourishing. I ate it like this, straight out of the pan with an avo fan (heh, that rhymes ๐Ÿ™Š), but you could always serve it with toast, or flat breads, or potato, or even wrap it up in a burrito! Whatever you fancy. It tastes amazing regardless ๐Ÿ˜Š Have put the recipe below for those who are interested! Have an incredible weekend, hunnies ๐Ÿ˜˜


// EASY PEASY TOFU SCRAM.
1 carrot, peeled + grated
1 zucchini, grated
1 tomato, diced
1 bok choy, chopped
100g tofu
1 tblsp tamari
Herbs + spices of choice - I used 1/2 tsp of each fennel seeds, coriander seeds + chilli flakes, a dash of turmeric, and salt + pepper to taste.

1. If using any herb seeds, warm these in a fry pan on a medium heat. Add the carrot, zucchini + tomato, and gently stir fry for a couple of minutes.

2. Add the tofu, and cook for a further 5ish minutes before adding the chopped bok choy, tamari, and any other herbs or spices you like!

3. Cook for another few minutes, or until the bok choy is wilted. Remove from heat, and serve!

FIRST RECIPE OF 2020! And it's super easy, low effort, and taaaaaaasty ๐Ÿ˜‹
Vegan Scallops! feat. King Oyster Mushrooms ๐Ÿ‘Œ
I've never been a big fan of scallops, so I have no idea if this is what they taste like, but the mushrooms definitely have the right texture, and I dunno, I like the flavour, so whether it's normal or not for scallops, who cares?! ๐Ÿ˜‚๐Ÿ˜‚
Have you cooked with king oyster mushrooms before? They're incredible! .

// KING SCALLOPS:
4 king oyster mushrooms

Marinade:
1 cup water
1 tsp vegan fish sauce (I use )
1/2 nori sheet, torn into 8 pieces
1/2 tblsp caper brine/pickle brine
1/2 tblsp lemon juice
(If brine isnt available, just use 1 full tblsp of lemon juice)

1. Bring to boil in a small pot the water, fish sauce, and nori sheet. Remove from heat after a minute or two, stir through the brine and lemon juice, and allow the flavours to infuse for 10 minutes. Remove the pieces of nori sheet. I ate mine... It was weird ๐Ÿ˜‚

2. Chop the root ends and caps off the king oyster mushrooms, then slice the stems into four equal rounds, or "scallops". Gently score a cross into both sides of the "scallops". 3. Place the scalloped mushrooms in a single layer in a large dish, and gently pour over the marinade. Allow the mushrooms to marinate for 20ish minutes, turning them over after about 10 if they aren't fully covered.

4. Remove the mushroom scallops from the dish. Heat a large frying pan on a medium - high heat with a drizzle of EVOO - you want a good sizzle when you cook the mushrooms! Sear the scallops in the pan for 3-4 minutes each side, or until golden, as pictured.

5. Let rest for 5 minutes, before serving with whatever you choose ๐Ÿ˜Š I served them with mashed potatoes + greens, but it would be pair nicely with noodles, rice or pasta! The marinade can easily be used as a sauce/dressing for these options too - no waste! โœŒ

Have you had your greens today?

BUT WHO CARES! Not having your greens one day is like not having a slice of cake another day. It's all part of a balanced lifestyle. Yes, the rario of greens to cake should swing more in favour of the former, but what I'm trying to say is you don't have to be the picture of health every day. There will be days where all you want is nourishing, wholesome foods, and there will be days where you choose to have more treats. So choose not to berate yourself for those days. Choose to just enjoy what you have when you have it, when you feel like it, relishing in both the wholesome foods for the body, amd the wholesome foods that your mind sometimes needs. Either way, you're looking after yourself eith freedom, fun, and full body nourishment ๐Ÿ™

For those who don't know, the Woolworths Free From Gluten Croissants have been confirmed vegan, and my life is officially complete โœŒ
First time trying them, served toasted and stuffed with rocket, relish, tofu + Bute Island Foods - Sheese - Australia jalapeรฑo chilli cheddar. AMAZING. All buttery and fluffy like a normal croissant, but it's 100% gluten free! AsI said. Life is now complete ๐Ÿ˜๐Ÿ˜

I mixed up my spices when making dinner, and blew my brain out with heat ๐Ÿ˜‚๐Ÿ˜‚ Thankfully, I had a big dish of mango chutney (which I re-filled twice ๐Ÿ˜…) to cool me down... And that's saying a lot, because I like my spice! Here's the recipe I meant to make:

MIXED POTATO + GREEN BEAN CURRY.
1 onion, diced
3 garlic cloves, finely chopped
1 tsp cumin seeds
1/2 tsp fenugreek seeds
1/2 tsp coriander seeds
1 of each white + sweet potato, washed + chopped small
300g green beans, top/tailed + chopped small
1 tsp turmeric
1/2 tsp cayenne pepper
1/4 tsp smoked paprika
1 tsp ground coriander
Cracked pepper
1/2 cup water

1. Heat a dash of olive oil in a large pan, and add the cumin, fenugreek + coriander seeds.
2. Fry for a minute or two, before adding the onion garlic, pepper, turmeric, cayenne, coriander + paprika. Coat + fry until fragrant.
3. Stir through the potato, and add the water. Cover the pan, and cook at a simmer for 10 minutes. 4. Add the beans, stir, and continue to cook covered until potato is soft, and beans are cooked, but still remain some crunch!
5. Remove the lid, and cook off any excess water. Serve with rice, pappadams, + mango chutney ๐Ÿ˜Š
