Dinner tonight was another win. I seriously LOVE my instant pot! Tonight I made the Olive Garden Creamy Chicken Pasta that has been going around the internet. Super easy and cheap, kid approved dinner.
Layer fully thawed chicken tenderloins, in the bottom of your instant pot (I had 1.22 lbs that I paid $4.25 for), a 1 lb box of pasta (I used Great Value Penne for $1.25), 1 small, 16 Oz., bottle of Olive Garden's Italian dressing ($3ish), 3 cups of chicken broth or water/bouillon (I used water and bouillon, so less than $1, it was a little runny, next time I will probably cut it to 2-2 1/2 cups of extra liquid), a block of cream cheese ($2), and a bag of frozen broccoli ($1). Don't stir!
Lock your instant pot and put the seal in place, once it is up to pressure, cook for 4 mins, do a 5 min natural release and then carefully finish with a quick release and you are ready to eat!
There was plenty for mine and my 12 yr old daughter's dinner tonight, plus lunch and dinner tomorrow, for just over $13.

One of my favorite crockpot meals! So easy and cheap.
Russet potatoes (I always just use as many as I want, no limit)
Hillshire farms sausage (I use beef, but any would work!)
Cajun seasoning (I don’t measure, just enough to taste)
Cream of potato soup (could use any cream of soup!)
This is me tripling the batch, so 3 packages of sausage and 3 cans of soup. If I double it, only two of each and so on. I layer it as well, it makes it easier to mix up. One layer of potatoes, one layer of sausage, one layer of soup, add seasoning and mix.
4-5 hours on high, 6-8 on low. If you cut the potatoes smaller, it can go quicker!
UPDATE:
Here it is!! Just about 4 hours later, and dinner is served!

I've seen a lot of people ask about easy ways to boil and peel boiled eggs. Everyone has their own way of doing it and I've tried just about everything and the eggs are still hard to peel, but someone posted a way that I haven't tried before and gave it a try. I tried it three different times and every time the eggs came out perfect.
I brought the water to a boil first. Then I added the eggs and let them boil for 13 mins then I put them under cold water and peeled them almost immediately. The shell pretty much slid off.
Hope this helps

Made sour cream sugar cookies 😋
Ingredients:
1/2 cup unsalted butter
2 cups granulated sugar
4 eggs
1 teaspoon vanilla
2/3 cup sour cream
1/2 teaspoon baking soda
3 teaspoons baking powder
4 cups all purpose flour, fluffed and levelled
Frosting:
1/2 cup salted butter
2 1/2 cups powdered icing sugar
1 teaspoon vanilla
2 tablespoons milk
Directions:
In a large bowl with an electric mixer, beat butter and sugar on high until creamy. Add eggs, vanilla, and sour cream and beat until smooth. Add baking soda, baking powder and flour and beat on low until combined (dough will be soft, almost like cake batter)
Preheat oven to 350 degrees and line baking sheets with parchment paper. Drop by heaping tablespoonfuls onto baking sheets 2-3 inches apart and bake for 10-12 minutes, until edges are golden and centers are set.
Frosting: With an electric mixer, beat butter until smooth. Add sugar, vanilla and milk and beat until smooth, adding additional sugar or milk to reach desired consistency (you don’t want it too thin!). Color if desired and spread on cooled cookies.

No Bake Banana Split Dessert
Found this easy recipe & it was delicious!
Ingredients
1 stick butter, melted
1 box graham cracker crumbs
1 (8 oz) cream cheese, softened
1/4 cups butter, softened
3 cups powdered sugar
4 bananas, sliced
1 (20 oz) can crushed pineapple, drained
1 (16 ounce) container Cool-Whip, thawed or 1 1/2 cups heavy whipping cream
1 (4 ounce) jar maraschino cherries, stemmed
1 cup walnuts or pecans, chopped
hot fudge sauce, slightly warmed
1 tablespoon rainbow sprinkles
Instructions
In a medium bowl, combine graham cracker crumbs and melted butter.
Firmly press into a crust in the bottom of 9×13 glass or porcelain dish, let it chill in the freezer for about 10 minutes to firm up.
In a medium bowl, cream together the cream cheese, 1/4 cups butter, and the powdered sugar until creamy, about 5 minutes.
Don’t be tempted to add milk, it will take a few minutes, but the mixture will blend up perfectly!
Spread the cream cheese mixture over the cooled graham cracker crust.
Add a layer of sliced bananas over the cream cheese mixture.
Spread pineapple chunks evenly over the bananas.
Evenly spread the Cool-Whip over the pineapple-banana layer using a rubber spatula.
Garnish with the pecans/walnuts and maraschino cherries.
Drizzle the chocolate fudge over the dessert and then sprinkle the rainbow sprinkles over the surface.
Chill for at least 4 hours before cutting to allow the layers to set.

Cheesy taco sticks!
Ingredients
* 1 lb. ground beef
* 1 packet taco seasoning mix
* 1 tube Pillsbury Pizza Dough
* 5 colby jack and cheddar cheese sticks, halved
* 4 tbsp butter, melted
* 1 tsp garlic powder
* 1 tsp dried parsley
Instructions
* Preheat oven to 425 degrees F.
* Lightly coat a large baking sheet with non-stick spray and set aside.
* Cook the ground beef in a skillet, breaking up with a wooden spoon until fully browned and crumbled. Drain any fat and return skillet to stove top. Mix in the taco seasoning packet (but no water), and stir until fully coated. Remove from heat and let cool to room temperature.*
* Spread the pizza dough out until it's flat and cut in half lengthwise and then 4 cuts up and down, creating a total of 10 small rectangles. Place about a tablespoon or more of the taco meat in the center of each pizza dough, top with a halved cheese stick and then carefully roll up the pizza stick, making sure to pinch all seams closed.
* Combine the melted butter, garlic powder and parsley in a small bowl and brush it on the tops of the cheesy taco sticks. Bake for 10 to 12 minutes or until golden brown on top. Serve hot with your favorite taco toppings!

Felt like Chinese food tonight but didn’t feel like dropping $40-$50. All ingredients were from Aldis, Sam’s Club, and Hy-vee. 2 cups of uncooked rice, 2 1/2 boneless skinless breast, 1 bag of frozen broccoli, 1- 14.5 oz jar of Burmans orange stir fry sauce (aldi brand), and 4 chicken egg rolls (in frozen food section-$ 2.35 at aldi). Fed 3 adults, and 1 kiddo comfortably, and my husband has lunch to take to work tomorrow.

I ordered a “chilled” rotisserie chicken on Wal Mart grocery delivery and I can’t believe for less than $3 I got enough chicken to make 24 tacos. (Mixed the chicken with 1 can of refried beans and 1/2 cup of salsa to make the filling) I also made about 5 cups of chicken broth with the leftover skin and bones!
Usually we prefer a Costco rotisserie chicken, but they’ve been all out when we’ve gone lately! What’s up with that?
These tacos are a huge hit with the whole family, just time consuming to fry up that many corn tortillas!
*Not 24 tacos in the picture, my kids descended upon them first. 😂😂

Since it’s cold and rainy here in GA, I think that calls for some chicken & dumplings 😋❤️
Here’s the recipe

3-4 boneless chicken breast
1 can of chicken broth
1 can biscuits (8 count)
Salt & pepper
Put chicken breast in crockpot
Pour cream of chickens, chicken broth and add salt & pepper on top

Once you see chicken is done, shred it
Flatten the biscuits with hand, cut into 4 squares and mix them in flour. One by one drop into crockpot. Cook on high for another hour or so until they are done. Stir & serve 😊

I was roughly 16yo when I realized that gravy was not a main beverage on other peoples tables. So when I'm camping and making one pan dinners, there should be no judgement when I revert to my Pennsylvania Dutch roots for home cooking.
Yes, it's all homemade. From the chicken thigh to the caramelized onions to the smothering onion and drippings gravy. All in one small cast iron pan from my great-grandmother.
Some things stand the test of time.
