🍰 Easy Kiwi Cheesecake 🥝
Ingredients:
Crust:
1.5 cups graham cracker crumbs (or 10-11 full graham crackers)
6 tbsp melted butter
Vanilla Cheesecake:
1 cup heavy whipping cream (divided)
1 tbsp unflavored gelatin
2/3 cup sugar
16 oz cream cheese (2 blocks), softened to room temperature
1 tsp vanilla extract
Kiwi Jelly Topping:
4 kiwis, peeled and pureed
1/2 cup water
1/2 cup sugar
1 tsp agar agar powder
2 drops green food coloring (optional)
1-2 kiwis, sliced for decoration
Directions:
Prepare Crust:
Preheat the oven to 350°F (180°C).
Mix graham cracker crumbs with melted butter until crumbly.
Press the mixture into a 10-inch springform pan.
Bake for 12 minutes, then set aside to cool.
Vanilla Cheesecake Filling:
Combine 1/4 cup heavy cream with gelatin, let sit for 5 minutes, then microwave for 30 seconds and let cool.
Whip the remaining heavy cream until stiff peaks form.
In another bowl, beat the cream cheese and sugar until smooth.
Fold the cream cheese mixture into the whipped cream, add vanilla extract, and mix well.
Add the gelatin mixture and combine thoroughly.
Spread this mixture over the cooled crust and chill in the refrigerator for at least 8 hours or overnight.
Kiwi Jelly Topping:
Puree 4 peeled kiwis in a blender.
In a saucepan, combine kiwi puree, water, sugar, agar agar, and food coloring (if using).
Heat over medium heat, simmer for 2-3 minutes until dissolved, then let cool for 5-10 minutes.
Pour over the chilled cheesecake and refrigerate for at least 30 minutes.
Decorate with sliced kiwis before serving.

Grilled Beef Ribs Recipe 🍖
Ingredients:
3 pounds beef ribs
For the Rub: Marinade:
3 tablespoons olive oil
1 tablespoon chili powder
1 tablespoon brown sugar (*see Notes)
1 teaspoon smoked paprika
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon cumin
1 teaspoon black pepper
1 teaspoon salt
For Serving:
1/2 cup barbecue sauce
Instructions:
Prepare the Rub:
In a bowl, combine olive oil, chili powder, brown sugar, smoked paprika, garlic powder, onion powder, cumin, black pepper, and salt. Mix until well-blended.
Marinate the Ribs:
Rub the mixture evenly over the beef ribs, coating them thoroughly. Cover and refrigerate for 1 to 2 hours to marinate.
Grilling:
Preheat the grill to 250°F (120°C) for indirect heat cooking.
Place the ribs on the grill over indirect heat. Cover and cook for about 1 1/2 hours, flipping every 20 minutes for even cooking.
Finish with Barbecue Sauce:

- 2 tbsp Butter
- 2 tbsp fresh minced Garlic
- 1/2 cup Chicken broth
- 1/3 cup Heavy whipping cream
- Sun-dried Tomatoes, chopped
- 1 tbsp White cooking wine (optional)
- 1/2 cup Fresh Shredded Parmesan or Italian cheese
- Salt, to taste
- Pepper, to taste
- Italian herbs, to taste
**Instructions:**
1. **Season and Sear Chicken Thighs:**
- Season chicken thighs generously with onion powder, garlic powder, Cajun seasoning, pepper, paprika, and Italian herbs.
- In a skillet, heat olive oil over medium-high heat. Sear chicken thighs on both sides until golden brown. Remove chicken and set aside.
2. **Prepare the Sauce:**
- In the same skillet, add butter and minced garlic. Cook for about 3 minutes until garlic is fragrant.

Japchae (Korean Glass Noodle)

½ lb beef, thinly sliced (such as sirloin, chuck, short ribs or tri-tip)
BEEF MARINADE:
2 tsp soy sauce
2 tsp white sugar
2 tsp finely minced garlic
1/2 tsp black pepper
FOR THE SAUCE:
1/4 cup soy sauce
2 tsp white sugar
1/2 tsp finely minced garlic
1 1/2 tbsp sesame oil
1/2 tsp cooking/kosher salt
1/2 tsp black pepper
NOODLES & VEGETABLES:
250g/ 8oz Korean sweet potato noodles
4 tbsp vegetable oil
2 eggs, lightly beaten
1 tsp cooking/kosher salt , divided
1 onion halve, sliced into wedges
3 green onion, white & green parts separated
200g/7oz shiitake mushrooms, sliced
2 carrots , peeled, cut into matchsticks
1 red bell pepper, sliced
4 1/2 cups baby spinach
2 tbsp white sesame seeds
Instructions
QUICK BEEF MARINADE:
Put beef in a bowl. Add marinade ingredients, then mix. Set aside.
SAUCE AND NOODLES:
Sauce – Mix the Sauce ingredients in a very large mixing bowl.
Cook sweet potato noodles per packet directions (normally 8 min in boiling water). Drain, briefly rinse under tap water then shake off excess water well. Add noodles into the bowl with the dressing. DO NOT MIX.
Heat a large skillet over medium-low heat. Add 1 tsp oil. Add beaten eggs swirl skillet to egg covers surface in a thin layer. Cook until it’s just set, about 2 to 3 minutes, then flip over and cook for another minute. Slip omelet onto a plate and let it cool.
VEGETABLES :
Heat 2 tablespoons of oil in a large non-stick pan over high heat. Cook the onion, white part of green onion and shiitake mushrooms with 1/2 tsp salt for 3 minutes, stirring constantly, just until starting to soften but not going golden. Pour on top of the noodles – don't mix yet!
Using the same pan still on high heat, heat 1 tbsp oil then cook the carrot and bell pepper for 2 minutes, constantly stirring. Add spinach, green onion and the final 1/2 tsp salt. Keep cooking for 1 1/2 minutes until the spinach is wilted. Transfer into the noodle bowl – still don't mix!
In the same pan, heat 1 tbsp of oil still on high heat. Add beef and cook for 1 1/2 minutes until very lightly golden and just cooked through. Add to the noodle bowl. Don't mix!
Slice cooled egg omelet into thin ribbons and add to the noodle bowl. Don’t mix!
Add most of the sesame seeds (reserve some for topping). NOW you can mix! Toss, toss, toss.
Transfer into a serving bowl, sprinkle with remaining sesame seeds. This is meant to be eaten warm, not piping hot. Enjoy

**Ingredients:**
- 1 lb ground beef
- 1 package (1 oz) taco seasoning
- 1 head iceberg lettuce, chopped
- 2 cups cherry tomatoes, halved
- 1 cup shredded cheddar cheese
- 1 cup black olives, sliced
- 1 red onion, diced
- 1 cucumber, sliced
- 1 bag (9.75 oz) Doritos, crushed
- 1 cup sour cream
- 1 cup salsa
**Directions:**
1. In a skillet, cook ground beef over medium heat until browned. Drain the grease and add taco seasoning, following package instructions.
2. Combine chopped lettuce, cherry tomatoes, cheddar cheese, black olives, red onion, and cucumber in a large salad bowl.
3. Add the cooked seasoned beef to the salad bowl.
4. Top the salad with crushed Doritos, dollops of sour cream, and salsa.
5. Toss everything gently to combine before serving.
