The koji process, originating from Japan and Southeast Asia, utilizes the koji mold to ferment various products like miso, amazake, and sake, enhancing their umami flavors. Koji, a fungus, saccharifies starches, converting them into sugars for fermentation, thus creating new flavors.

Coffee producers faced challenges applying koji to green coffee due to its low starch content. However, experiments with coffee cherries yielded more palatable results. Koji fermentation breaks down starches into fermentable sugars, enhancing mouthfeel and creating fruity aromas through the production of glutamates and amino acids.

Unlike other methods, koji fermentation allows for the utilization of more sugars, intensifying flavor during fermentation. Initially tested on Red Bourbon coffee, koji enhanced existing components, altering the coffee’s texture and flavor profile. The Java variety showed the most favorable response to the koji process.

Recognizing its potential benefits, the method was shared openly for coffee producers to explore and utilize.
